Ceviche

Hello Darlings!

To fulfill the request, here is my one of my favorite recipes and so easy to make. Another plus is to that it’s generally pretty healthy. As I mentioned before my husband and I are doing a fitness challenge through the holidays to keep off the extra weight and start off new year right!

Ingredients: Yields 2 serving

6oz Shrimp (deveined and pre-cooked)

1 cup of cucumber, peeled

1/2 Cup Chopped onion (red or yellow)

2 Tbsp Heinz Ketchup

2 Tbsp Lime Juice

1 Tbsp Chopped Parsley

Salt & Pepper to taste

6 Lightly Salted rice cakes

1 Tbsp Real Mayonaise

Directions:

Chop all ingredients into cubes and place in a large bowl. Pour lime juice, ketchup, and salt and pepper in bowl. Mix together until the sauce is evenly spread throughout.

Spread mayo evenly on 3 rice cakes (per person), place a spoonful of ceviche on each cake.Eat and enjoy, and save those calories for Thanksgiving!
